Father Alfred's Herb Mustard Lamb

 

1 rack of lamb with fat removed     and bones cleaned                      
2 tesp salt                                            
 3 tbsp Dijon mustard
2 tesp cracked black pepper corns                     
1 tbs olive oil
2 tablespoons chopped rosemary & thyme           
1 tbs chopped oregano & parsley


 Mix the mustard, herbs and seasoning together and slather over lamb. Refrigerate 2- 3 hours
Roast in preheated 375 degree oven, about 12 mins for medium rare
