                    Lynn's Dijon Chops

 

4 to 6 large rib chops 
1 lemon, halved 
garlic powder 
freshly ground pepper 
1 cup chopped fresh parsley 
1/3 cup Dijon mustard 
1 tablespoon wheat bran or plain bread crumbs 
non-stick cooking spray 
Trim fat from lamb chops. Rub both sides with lemon; sprinkle lightly with garlic powder and pepper.Combine parsley, mustard, and bran; mix well, and press on all sides of chops. Place chops in a 12- x 8- x 2-inch baking dish coated with cooking spray; bake, uncovered, at 500 degrees for 4 minutes. Reduce heat to 350 degrees, and bake chops an additional 15 minutes or to desired doneness. 
Serves 4 to 6.
