1/2 cup each chopped; onion  and green bell pepper                                  
 31/2 cups cooked rice                                             
1 14.5 oz can diced tomatoes 
1/4 tesp salt                                   
2 tesp. curry powder                                                  
1 tesp ground coriander 2 cloves minced garlic 
1 tart apple chopped 1 cup
 2 cups cooked cube lamb                                        
1/2 cup chicken broth
1 tesp each; cumin, pumpkin pie spice  and turmeric                     
 1 tbs olive oil
                                                               

Combine onion, bell pepper, garlic, oil, curry powder, cumin, pie spice, turmeric, salt and cayenne in a 2 qt. casserole cover with lid and micro wave on high 5 min. Stir in tomatoes with juice, apple and chicken broth cover and micro wave on high 6 min. Stir in lamb and micro-wave high 2 min. until everything is hot. serve over rice
