Lynn's Skewed Heart Chili Sauce
1 x beef heart about 2 pounds, trimmed of silvery membrane, cut into 1-inch
cubes
MARINADE:
1/2 cup red wine vinegar
1 tsp finely chopped fresh hot red chili
2 tsp finely chopped garlic
1 tsp cumin seeds
1 tsp salt
freshly ground black pepper to taste
sauce see note:
1 tbl chili de arbol or othe ground red pepper
1 tbl olive oil
Method :
In a large bowl, combine vinegar, chili, garlic, cumin seeds, salt and pepper.
Add cubes of beef heart. Refrigerate, covered, at least 1 hour.
Meanwhile, combine red pepper and olive oil, or use store-bought hot sauce
Remove beef heart cubes from marinade and place on skewers. Grill until done,
turning and brushing on all sides with sauce.
