Lynn's Salmon and Havarti Quesadillas

 

12 flour tortillas
12 slices  classic havarti cheese
1 4 ounce package thin sliced smoked salmon, pulled apart into 1-inch pieces
1/2 cup chopped green onions or chives
1 (8-ounce) jar roasted red peppers, drained and cut into strips
1 cup  salsa or Cullen's Picante SauceSC16


Heat oven to 450 degrees F. Line two baking sheets with foil and spray with non-stick cooking spray.

Place 3 tortillas on each sheet pan. Place 1 slice of  Classic Havarti Cheese on tortillas. Spread 4 to 5 pieces salmon over cheese. Top the salmon with onions and sliced peppers. Top each quesadilla with another slice of cheese and tortilla. Spray the top of the tortillas with non-stick cooking spray and bake the in oven for 5 minutes. Remove from oven, turn quesadillas over and bake another 5 minutes or until cheese is melted and tortillas are golden brown.

Remove from oven, let cool 5 minutes and place on cutting surface. Cut into wedges and serve with  Cullen's Picante SauceSC16  or other sauce Mexican Sauces M72
