Kat's Enasalda Turkey Chalupas

 

2 cups cooked rice, cooled to room temperature
1 1/2 cups cooked turkey breast cubes
1/2 cup cubed jalapeno Monterey jack cheese (3 ounces)
1 (4 ounce) can chopped green chiles, undrained
2 tablespoons chopped fresh parsley
1/4 cup  Shanna's Salsa Mayonnaise MT41
1/4 cup sour cream
Fried corn tortillas

Combine rice, turkey, cheese, chiles and parsley in large bowl.

2. Blend mayonnaise and sour cream; add to rice mixture and toss lightly. 

Serve on tortillas and top with shredded lettuce, chopped tomatoes and slice avocado.
