  Black Bean Burrito

 

1 Grande Flour Tortillas
2 cups cooked chicken
1 can (16 oz) black beans, drained Or Pinto Beans
1 cup shredded cheese
1 cup picante sauce
2 cups guacamole or two fresh avocados, sliced


Heat oven to 350 degrees. Remove tortillas from package. Wrap tortillas in foil and place in the oven for 10 minutes. Remove from oven. Set aside. Combine, chicken and beans in a medium size bowl. Cover bowl with plastic wrap and fold back one edge. Microwave on High power for 3 minutes. Stir mixture, cover and microwave on High power for 2 more minutes; set aside. Unwrap tortillas and lay on a flat surface. Distribute chicken, beans, cheese and picante sauce evenly onto each tortilla. Fold as shown in illustration on burrito tortilla bag. Place burritos in a large casserole dish and heat in oven for ten minutes or until warm. Top each with spinach or lettuce, guacamole or avocado, tomato, sour cream and optional bell pepper, green onion and cilantro.
