Family Meatballs with Gravy
1 pound lean ground beef
1/2 pound ground pork
1/4 cup milk
1 egg, lightly beaten
1/4 cup bread crumbs
1/4 cup finely chopped onion
1/4 cup finely chopped green or red bell pepper
1 tablespoon ketchup
2 tablespoons chopped parsley
1 1/4 teaspoons salt
1/2 teaspoon pepper
vegetable oils, bacon drippings, or shortening
1/2 cup beef broth
In a large bowl combine ground beef and pork, milk, egg, bread crumbs, chopped
onion, bell pepper, ketchup, parsley, salt, and pepper. Shape into large
meatballs, about l 1/2-inch in diameter. Refrigerate meatballs for at least 1
hour. Brown meatballs in a large skillet in hot oil, add beef broth, and cover
pan. Cook over low heat for 45 minutes or until meatballs are cooked. Remove
meatballs to warm dish. For gravy, thicken skillet drippings with a paste of
flour and water.
Compromise makes a good umbrella but a poor roof; it is a
temporary expedient.
