Granny's Sweet Sour Meatballs

 

1 pound lean ground beef
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon soy sauce
1 can (20 ounces) pineapple tidbits, drained, syrup reserved
1/2 cup chopped sweet pickles with juice
1 tablespoon cornstarch
Season ground beef with salt, pepper, and soy sauce and shape into 1-inch meatballs. Brown meatballs in oil in skillet over medium low heat. Add green and red bell pepper and onion; cook until tender. Mix the pineapple syrup, sweet pickles with juice and cornstarch; add to skillet. Cook and stir until sauce thickens and becomes clear. Add the pineapple tidbits; cover and cook sweet and sour meatballs for about 3 minutes or until heated through. Serves 4
