Granny's Taco Meatballs

 

1 pound lean ground beef
1 cup finely chopped onion
1 cup finely chopped green pepper
1 cup finely chopped celery
2 cups cooked rice
2 eggs -- beaten
2 teaspoons garlic salt
1 can (8oz) taco sauce
1 can condensed Cheddar cheese soup -- undiluted
Combine meat, onions, green pepper, celery, rice, eggs and garlic salt. Mix well and form into 12 meat balls. Place in a lightly greased 2 1/2-quart casserole.
Bake at 350° for 30 minutes; drain off any excess grease. Blend and heat taco sauce and soup; pour over meat balls. Cover and continue baking for 30 minutes longer.
Serves 6.

Putting off an easy thing makes it hard, and putting off a hard thing makes it impossible.
