Barbocoa
Purchase a beef head or calf head at the
grocer or slaughterhouse.
Rinse it out.
Rub oil or lard all over, salt and pepper, wrap in heavy foil.
Place in shallow pan and into the oven at 350 degrees for 3 to 4 hours or until
the meat pulls away easily from the bone.
Serve on flour tortillas and top with salsa.
(Boneless beef heads are also available).
Real obstacles don't take you in circles. They can be overcome.
Invented ones are like a maze.
