Pumpkin Muffin
1 cup cooked pumpkin or squash
1/2 small chopped onion
1 Tbsp melted butter
1 beaten egg
1/4 cup grated cheese
1/4 tsp salt
1/4 tsp curry powder
Mash the pumpkin well, then add onion, butter, egg, cheese, salt and curry.
Stir to combine, spoon into lined muffin tray. Cook on high for 3-5 mins,
or until set. Stand for 2 mins, remove papers before serving. Makes 4-5 muffins.
Tested in a 650 watt oven.
We are closer to the ants than to the butterflies. Very few
people can endure much leisure.
