  Nancy's Fruitcake Muffins

 

2 sticks butter or margarine                                   
1 cup pear or fig preserves
2 cups brown sugar                                               
2 tsp Vanilla extract
1 pd each candied pineapple and cherries              
3 1/2 cups all purpose flour
4 small eggs                                                           
1 cup chopped date
1 tsp each; salt, baking soda                                   
2 cups chopped nuts 
and almond extract         

in a bow cream butter and sugar. Add eggs one at a time, beating well after each egg. 
Add salt, soda, almond and vanilla extracts and preserves.
Place fruit and nuts in a separate bowl. Sift part of the flour over top, fold fruit mixture
into batter. Mix well. Fold in remaining flour. Bake in a well greased muffin pan
@ 350 about 15min.
