Lynn's Apple Butter Muffins

1 3/4 c. flour
1/3 c. sugar
2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 egg, beaten
3/4 c. milk
1/4 c. canola oil
1/3 c. apple butter
1/3 c. pecans, chopped
2 T. sugar


Preheat oven to 400 degrees. 
In bowl, combine flour, 1/3 c. sugar, baking powder, salt, cinnamon and nutmeg. 
In separate bowl, combine egg, milk and oil. Add to flour mixture. 
Spoon tablespoon of batter into each muffin cup. Spoon teaspoon of apple butter, then remaining batter. 
Combine pecans and 2 T. sugar. Sprinkle atop batter. 
Bake for 20 minutes. 

'If Kathy leaves her house in Albany heading for Syracuse, 90 miles away, at a speed of 60 miles per hour, and Peter Jay leaves Syracuse heading for Albany at a speed of 55 miles per hour, where will Kathy and Peter Jay arrive at the same place?' Who the hell cares? Kathy and Peter Jay won't be able to get together anyway.
