Lynn's Cherry Chocolate Muffins

 

2 cups milk chocolate chips-divided
1/4 cup firmly packed brown sugar
1/4 cup granulated sugar
2 tsp. baking powder
1/2 tsp. baking soda
 1/2 cup chopped candied cherries or maraschino cherries
1/2 tsp. salt
3/4 cup milk
1/3 cup vegetable oil
2 cups all-purpose flour
1 egg
In large bowl, combine flour, 1 3/4 cup chips, brown sugar, granulated sugar, baking powder, baking soda & salt. Stir in cherries. In small bowl combine milk, oil & egg until well blended. All liquid ingredients to dry ingredients; stir just until moistened. Spoon batter into 12 paper-lined muffin cups; cups will be full. Sprinkle with remanning 1/4 cup chocolate chips. Bake in preheated 375° oven for 18-20 minutes or until golden. Cool for 5 minutes. Serve warm
