Kat's Spanish Sauce
1/2 cup chopped onion
1 garlic clove minced
1/4 cup chopped celery
1/2 cup diced pepper
2 tbs olive oil
21/2 cups canned tomatoes
1 bay leaf
Salt & pepper
3 tbs minced fresh cilantro
1 tbs fresh parsley
1 tbs celery leaves
1/2 tsp ground cloves
1 tsp flour
In a pan sauté onion, garlic, celery and peppers in olive oil over
moderate heat until onion is golden.
Add tomatoes and all remaining ingredients. Blend and simmer over low heat 1
hour or until very thick.
