Lynn's Pineapple Beurre Blanc

2 tps finely chopped white part of green onion or shallot
1/2 cup unsweetened pineapple juice
11/2 tsp lemon juice
8 to 10 tbs unsalted butter, chilled and cut into cubes
Salt & pepper

In saucepan, combine shallot or green onion, pineapple and lemon juice. Cook until liquid reduces to about 3 or 4 tbs. 
 Over low heat whisk in butter one piece at a time, until sauce is thick and creamy. Whisk constantly, remove from heat. Season with salt and pepper
