Granny's Tex Mex Meat loaf

 

11/2 lb ground beef
3 slices bread in small pieces
1 egg
2 tbs salsa
10 oz can diced tomatoes and chilies
1 chopped small onions
11/2 tsp chili powder
1 tbs cumin powder
Salt & pepper
1 clove minced garlic
1/2 cup salsa  Sauces Mexican
1/4 cup shredded cheddar cheese


Preheat oven to 375 degrees F. Combine the first 10 ingredients.  Spread
into an ungreased 8.5 x 4.5 x 2.5 inch loaf pan.  Bake 1 hour; drain excess
drippings.  Spoon salsa sauce over cooked loaf, then sprinkle with cheese.
Bake an additional 12 minutes.
