Granny's Sausage Meatloaf
1 Tbsp. olive oil
1 cup chopped onion
1 med. red bell pepper, chopped
1 med. green bell pepper, chopped
2 garlic cloves, minced
1/2 tsp. powdered thyme
1/2 tsp. oregano
1 lb. Roll Sausage
1 lb. lean ground beef
1 egg
1/2 cup tomato sauce
1/2 cup beef broth
1/3 cup flavored or plain bread crumbs
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup tomato ketchup
Preheat oven to 350 degrees F. Heat oil in large skillet over medium heat. Add
onions, peppers, garlic, thyme and oregano. Cook until vegetables are softened,
about 3 minutes. Transfer to mixing bowl. Crumble sausage in same skillet and
cook until no longer pink. Drain off drippings and place sausage on paper
towels. Add sausage to mixing bowl and cook 10-15 minutes. Add uncooked ground
beef, egg, tomato sauce, beef broth, bread crumbs, salt and pepper. Combine
well. Press mixture into ungreased 9" x 5" x 3" loaf pan and
spread ketchup over top of loaf. Bake 50-60 minutes. Pour off any accumulated
oil before slicing. Refrigerate leftovers.
Serves 6-8
