Sausage & Spinach With Tomato Olive Sauce

cup olive oil
1 large onion diced
4 cloves minced garlic
1 tsp each basil, oregano, thyme and crushed red peppers
2 packages 10 oz each frozen spinach, thawed, squeezed dry, and finely chopped
2lbs lean ground beef
1 lb Italian sweet sausage removed from casing and crumbled
1/4 cup fine bread crumbs
3 beaten eggs
1/3 cup grated Parmesan cheese
In a large skillet, over high heat the olive oil. Add onion, garlic,
basil, oregano, thyme and hot pepper.
Reduce heat to low and cover and cook 20 nins stirring once or twice. Uncover
add the spinach and stirring
breaking up any lumps for 3 mins. Remove and let cool. Preheat oven to
350. In a bowl combine beef and sausage
stir in spinach mixture, bread crumbs, salt , cheese and eggs. Mix well and form
loaf and bake 11/2 hours.
