Tex Mex Tamales

 

Lynn's Shrimp Corn Tamales

 

4 x Poblano chiles (Seeded & stemmed)
2 x Jalapenos (Seeded & stemmed)
4 x Shallots (Peeled & quartered)
2 sm Cloves of garlic
1 bn Cilantro (leaves only)
1 cup Orange juice
1 tsp Lime juice
1 pch Salt
2 oz Vegetable oil

 Method :
Preheat oven to 450 degrees F. Toss Poblanos, Jalapenos, Shallot and Garlic in Vegetable Oil and roast in oven till chiles are blistered and garlic and shallots are soft and golden brown. Remove from oven, allow to cool. Place all ingredients in blender with cilantro leaves and orange juice. Puree.
Remove from blender, season with salt and lime juice, set aside.

8 x Ears of corn (Kernels removed from cob)
2 oz Butter
    Truffle oil (as desired)
    Salt (to taste)
    Maple syrup (to taste)
12 x Dried corn husks, tied at either end to resemble a boot

 Method :
Preheat the oven to 350 degrees F. In a food processor puree the corn kernels on high for 30 seconds. Transfer to a buttered casserole dish and place in preheated oven for 15 to 20 minutes - checking and shirring every five minutes or so to keep from developing too much brown color. The objective here is to cook out as much of the water from the puree as we can. This will make it thicker and will also intensify its flavor. Remove from oven and transfer to a bowl. Season with salt, maple syrup and as much of the truffle oil as you like. Spoon mixture evenly into the twelve corn husk boots.

 12 lrg Shrimp (peeled & deveined)
    Salt (to taste)
2 oz Vegetable oil
    Green chile sauce
    Truffle corn tamale
    Black and/or white truffle for garnish (optional)

 Method :
Heat oil in heavy saucepan over medium heat. Season shrimp with salt and saute about half done - maybe 30 seconds a side. Add Green Chile Sauce to pan and reduce heat to a simmer. Cook for another 2 to 3 minutes allowing excess liquid to evaporated and Green Chile sauce to become Green Chile Glaze. Check for seasoning of final mixture. Place one shrimp in the center of each Tamale and arrange on a platter. Shave fresh black or white truffle over the tops of all of them. Serve immediately accompanied by shots of high end tequila.
