James's Tex Mex Crabs & Citrus Dressing
1 1/2 lb snow crab cocktail claws - (abt 18) thawed if necessary
Tortilla chips
Raw vegetables
SALSA
2 x tomatoes chopped
2 tbl thinly-sliced green onions
1 tbl chopped cilantro
1/4 tsp salt
1/4 tsp hot pepper sauce or to taste.
CILANTRO-CITRUS DIPPING SAUCE
1/2 cup orange juice
1/4 cup lime juice
1 tbl white wine vinegar
1 x garlic clove pressed
1 1/2 tsp chopped cilantro
1/2 tsp red pepper flakes
Method :
For Salsa: Mix together all ingredients; set aside.
For Cilantro-Citrus Dipping Sauce: Whisk together all ingredients; set aside.
Steam or microwave cocktail claws 4 minutes, until heated through. Chill, if
desired. Or, arrange hot snow crab claws on a platter with chips, vegetables and
bowls of Salsa and Cilantro-Citrus Dipping Sauce.
This recipe yields 6 appetizer servings.
