Tex Mex Salads

 

Fiesta Cornbread Salad

 

1 8.5 ounce box  corn muffin mix
1 egg
1/2 cup milk
1 8 ounce package mixed salad greens
2 cups prepared or fresh made Pico de Gallo  Tex Mex Sauces
2  fresher lasting jumbo avocado halves, sliced


1. Heat oven to 400 degrees. Spray a 2-quart baking dish with nonstick cooking spray; set aside.
2. Prepare corn muffin mix according to package directions and pour batter into prepared baking dish. Bake on center oven rack for 18 minutes. Cool and cut into crouton-size cubes.
3. Layer salad greens, pico de gallo and cornbread cubes in a large salad bowl, toss to combine. Top salad with avocado slices and serve with your favorite vinaigrette dressing.
