Tex Mex Salads

 

Ensaldo Con Mangos

 

1 avocado, peeled, seed removed and sliced
1 mango, peeled, seed removed and sliced
1 10 ounce bag European mixed salad greens
1/4 sliced red onion, separated into rings
1/2 cup crumbled queso fresco
1/2 cup fat free raspberry vinaigrette salad dressing


1. Layer avocado slices, mango, salad greens, onion, queso fresco and pecans in a large salad bowl.
2. Cover salad with plastic wrap and chill for 30 minutes or more.
3. Before serving toss salad and serve raspberry vinaigrette salad dressing.
