Warm
Oyster with Caviar
Sea Salt 16 oysters, shucked, liquor and bottom shells reserved
4 tbs heavy crème
fresh ground white pepper
juice of 1/2 lemon
2 tbs soft unsalted butter
1 piece smoked salmon, 1x3 in 1/4 thick
3 oz fresh caviar
Heat oven to 200 spread sea salt on each 4 salad plates and set aside. On an
oven proof platter arrange
shells on sea salt bed. Place liquor in a small sauce pan add oyster till warm
but not curl or shrink.
Liquid should be warm not simmering. Drain oysters and place on shells and cover
and put in oven to keep warm.
Add crème to sauce pan and a few pinches of salt and pepper, the lemon juice,
salmon and butter. Cook one min. until
slightly thick. Add 1/3 caviar and remove from heat. Discard salmon, spoon
caviar creme over each oyster
and top each with a dollop of caviar and transfer to plates and serve
