Lynn's Oyster Croquettes

 

12 oyster
1 boiled potato
1 egg yolk 
cracker crumbs

 

Chop very fine one dozen oysters, take one boiled potato and mash hot into fine oysters; take the yolk of one egg only, mix well into the oysters and season with pepper and salt to taste;  after making into oblong cakes, then roll them, in powdered crackers; have your fat very hot, and fry quick and send to table
