Granny's Flannel Cakes

 

2 cups milk
2 tsp butter
2 eggs beaten
3 cups sifted flour
1/2 tsp salt
1 scant tsp dry yeast

Heat milk in pan to almost boil, add butter. Reduce heat to low, keep milk hot until butter melts.
Remove from heat and cool to lukewarm. Add eggs, flour and salt. Blend well, stir in yeast. Pour
into bowl, cover and let stand in a warm place for 3 hours. Then cook on a greased griddle or skillet
by the spoonfuls like pancakes.

So far as I know, anything worth hearing is not usually uttered at seven o'clock in the morning; and if it is, it will generally be repeated at a more reasonable hour for a larger and more wakeful audience.
