Apple & Cream Pancakes
1/2 cup milk
2 eggs
1/2 cup all-purpose flour
1/4 tsp salt
2 Tbsps butter
1/4 cup unpacked brown sugar
1 3-oz pkg cream cheese, softened
1/2 cup sour cream
1/2 tsp vanilla extract
1 1/2 cups thinly sliced unpeeled apples
1/4 cup chopped nuts
In small mixing bowl, combine milk, eggs, flour and salt. Beat until smooth.
Heat a cast-iron skillet in a 450° oven until hot. Remove from oven and add
butter. When butter is thoroughly melted, add batter to cover bottom and bake
for 10 minutes or until browned. Meanwhile combine sugar and cream cheese, then
blend in sour cream and vanilla. Spread 3/4 of cream cheese mixture on top of
pancake and arrange apples in circular fashion on top. Spread remaining cream
cheese mixture over apples and sprinkle with nuts. Serve in iron skillet, cut
into wedges and serve immediately. Yield: 4-6 servings
