Lynn's Pancake With Peach Sauce

 

1 1/4 cups SIFTED FLOUR
3 tsps BAKING POWDER
1 Tbsp SUGAR
1/2 tsp SALT

1 cup MILK
1 BEATEN EGG
2 Tbsps MELTED SHORTENING OR BACON FAT

SIFT TOGETHER FLOUR, BAKING POWDER, SUGAR AND SALT. COMBINE EGG, MILK AND OIL. ADD TO DRY INGREDIENTS, STIR. BAKE ON HOT GRIDDLE. MAKES 8 4-INCH PANCAKES.

TOP WITH  PEACH SAUCE

1/3 cup SUGAR
1 Tbsp CORNSTARCH
1 1/2 cups ORANGE JUICE
2 tsps LEMON JUICE
FRESH SLICED PEACHES OR 14 OZ FROZEN PEACHES

MIX SUGAR W/CORNSTARCH. BLEND IN 1/4 CUP ORANGE JUICE. HEAT 1 1/4 CUPS ORANGE JUICE TO NEAR BOILING. ADD TO CORNSTARCH MIXTURE. STIR UNTIL THICKENED. ADD LEMON JUICE. ADD PEACHES AND SIMMER 5 MINUTES.
