Pancakes
The Perfect Pancake
1 cup flour,
loosely packed
1 tablespoon baking powder
1 egg
1/2 cup low-fat 2 percent milk
1/2 cup water
1 tablespoon canola oil

Whisk or sift flour and baking powder together.

In a separate bowl, whisk egg, oil, and milk together, followed by
water.

Stirring liquid, slowly whisk in flour and baking powder mixture.
Don't over whisk, this will toughen pancakes.
4.
Pour on a hot griddle using 1/4 cup of the batter per pancake. If
necessary,
use a spoon to spread the batter out a little, forming thinner pancakes that
will cook through.
5.
When bubbles form and pop, the pancake is ready to turn. Only turn
once.
