Pecan Raisin Pancakes
3/4 cup regular oats (not instant)
1 1/2 cups milk
2 eggs, beaten
1/4 cup vegetable oil
1 1/4 cups flour
2 tablespoons sugar (or sweetener equivalent)
1 tablespoon baking powder
1 teaspoon cinnamon
1/2 cup raisins
1/2 cup pecans
Soak oats in milk and let stand about 5 minutes. Add beaten eggs and
vegetable oil. Mix well. Combine dry ingredients and add to liquid mixture,
stirring only to moisten; fold in raisins and nuts. Cook on hot, ungreased
non-stick griddle or lightly greased metal skillet or griddle. Turn when tops
are bubbly and slightly dry; brown the other side
