Granny's Pumpkin Pecan Pancake

 

2 cups  Buttermilk Pancake Mix
2/3 cup  Solid Pumpkin
1/2 teaspoon pumpkin pie spice
1/3 cup  Chopped Pecans
1 bottle Pancake Syrup



1. Combine pancake mix, solid pumpkin, pumpkin pie spice, pecans and 1 1/4 cup water in a large mixing bowl. Stir pancake batter until smooth.
2. Heat an electric pancake griddle or a large skillet over medium high heat for 3 minutes. Spray the griddle or pan with nonstick cooking spray. Pour 1/4 cup pancake batter for each pancake. Cook pancakes for 1 to 1 1/2 minutes per side. Turn pancakes over only once.
