Applesauce Pancakes With Apple Cider Sauce
1 egg
1 cup flour, sifted
1/2 cup milk
1/2 cup applesauce (preferably homemade)
1/2 tsp. salt
3 tsp. baking powder
2 Tbsp. melted butter
Combine all the ingredients, then cook on a griddle. Serve with Apple Cider
Sauce. Makes 8 pancakes. Serves 2.
Apple Cider Sauce:
1 cup pure apple cider
1/4 to 1/2 cup sugar
1 Tbsp cornstarch
1/2 tsp. cinnamon
1 Tbsp. fresh lemon juice
2 Tbsp. butter
Mix all the ingredients, except butter, in a saucepan over moderate heat
until mixture thickens. Boil for 1 minute. Remove from heat and stir in the
butter. Serve hot over pancakes.
