Banana Pancakes
There are two special ingredients for this recipe. First, you need very
ripe bananas. The peels should be almost completely brown. If you can't find
brown bananas, you can ripen bananas fast by placing them in a small paper bag
with a few apples for a couple of days. The other special ingredient is Creme
De Banana syrup. We use the Torani brand. It's the same brand most espresso
bars use. You can find it at specialty food stores and on the internet. Or, just
buy a shot of it at your local coffee house.
Ingredients:
1 1/4 cup flour
1 tablespoon baking powder
1 tablespoon sugar
2 bananas, peeled
1 egg
1 1/4 cups buttermilk
1 tablespoon Creme De Banana syrup
3 tablespoons melted butter
Sift together dry ingredients into a large bowl. In a separate bowl, mash
the bananas into a lumpy paste. Whisk the egg, buttermilk, Creme De Banana
syrup, and 2 tablespoons of butter into the banana. Whisk the banana mixture
into the dry ingredients. Set batter aside to rest for ten minutes. Place a
griddle over medium heat and brush it with melted butter. Use a third of a cup
of batter for each pancake. Peek underneath and flip when the cakes pass golden
brown. Place a dollop of Sour Cherry jam on each cake and serve immediately.
