Cullen's Dutch Apple Pancakes

 

4 large eggs
1/2 cup flour
1 tbs sugar
1 tesp vanilla
1/4 tesp salt
1/2 tesp nutmeg
1 cup milk
2 tbs butter, melted

Combine first six ingredients. Whisk in milk then melted butter. Let mixture stand at room temperature for 20 to 30 minutes.

Spray a 10" deep dish pie plate with non-stick vegetable spray, then melt 1/4 cup butter or margarine in it (in low temp oven or microwave). Sprinkle butter with 1/4 sugar, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Core and slice apple and arrange on sugar mixture. Sprinkle with another 2 to 3 tablespoons sugar. Place in 400° oven until mixture begins to bubble. Pour egg mixture slowly into pan. Bake 15 minutes at 400°, then reduce oven to 375° and bake 10 more minutes.

Note:  The pancake puffs as it bakes, and should be served just as it comes out of the oven.
