Lynn's Orange Pancakes With Orange Butter

 

Pancakes:
2 cups flour
1 tsp salt
2 tsp baking soda
1/4 cup sugar
1/2 tsp thyme
2 eggs lightly beaten
1 3/4 cups orange juice
1/2 stick butter, melted

Orange Butter Sauce:
1 stick butter melted
3 Tbsp cornstarch
2/3 cup sugar
1 oz julienned orange zest
2 cups orange juice (heated)

Instructions:
Pancakes: Heat griddle to 375. Mix dry ingredients. Add eggs, stir, then add orange juice and butter. Batter will be thick. Use about 1/4 cup of batter for each pancake.

Orange Butter Sauce: Melt the butter with the cornstarch for 1 minute to make a white roux. Stir in the heated orange juice and then the remaining ingredients. Continue stirring over medium heat while thickening. Bring to boil, then simmer for 5 minutes.

Drizzle hot orange butter over pancakes. Serve with optional maple syrup.

There are plenty of teams in every sport that have great players and never win titles. Most of the time, those players aren't willing to sacrifice for the greater good of the team. The funny thing is, in the end, their unwillingness to sacrifice only makes individual goals more difficult to achieve. One thing I believe to the fullest is that if you think and achieve as a team, the individual accolades will take care of themselves. Talent wins games, but teamwork and intelligence win championships.
