Multigrain Pancakes
1 cup all-purpose flour
3/4 cup whole wheat flour
1/4 cup wheat bran
1/4 cup wheat germ
3/4 cup oat bran
1/2 cup powdered buttermilk*
3 cups water
1 tsp Vanilla extract
2 eggs, slightly beaten
Mix buttermilk powder with water and eggs. Slowly stir in other ingredients.
Add extract lastly. Stir by hand or mixer until all lumps are gone. Ladle out
1/4 cup at a time onto a lightly greased, medium hot griddle. Turn when bubbles
stay on top.
*Note: 3 cups of regular buttermilk can be substituted, but eliminate the
water.
Makes close to 2 dozen.
The greatness comes not when things go always good for you. But
the greatness comes when you're really tested, when you take some knocks, some
disappointments, when sadness comes. Because only if you've been in the deepest
valley can you ever know how magnificent it is to be on the highest mountain.
