Kat's Potatoes Pancakes

 

6 medium potatoes, peeled
1 small onion. grated
3 eggs
3'4 cup flour
2 tsp salt
Oil for cooking

Grate potatoes coarsely into a bowl of cold water. This removes some starch, making
cakes crisper. In another bowl combine everything but oil. Drain potatoes
pressing out all liquid. Beat potatoes into mixture. After griddle is heated with oil,
spread batter into 4" rounds cook till brown on both sides
