Tuna & Pasta Salad
1/2 cup olive or vegetable oil
1/4 cup lemon juice
1/4 cup vinegar
Salt & pepper
1 tablespoon dried oregano
1 pound Small Shell Pasta, cooked and drained
2 cans (12 oz) tuna, drained
1 cup chopped red or white onion (1 medium)
2 cups chopped tomatoes (2 medium tomatoes)
1 cup chopped cucumbers
1/2 cup sliced olives
1/2 cup chopped fresh cilantro
Mix oil, lemon juice, vinegar, salt, pepper and oregano in large bowl.
Add shells, tuna, onion, tomatoes, cucumbers and olives and cilantro.
Mix gently. Serve immediately or refrigerate overnight.
