Texas Chocolate Peanut Pie

 

1 chocolate cookie pie crust, 9 inch
2 eggs, separated
1/2 cup brown sugar
1/2 cup sweet chocolate chips
3/4 cup peanut butter, regular or crunchy
2/3 cup HCF evaporated milk


Heat oven to 350 degrees. In a small bowl, beat egg whites until stiff peaks form; set aside. In a large bowl, beat egg yolks and brown sugar until mixture is light in color and thickened. Blend in peanut butter. Gradually beat in evaporated milk. Fold in egg whites and chocolate chips. Pour mixture into chocolate cookie pie crust foil and bake 10 more minutes or until crust is golden.
