Custard Peach Pie
1 pt. dried peaches
1 uncooked deep dish pie shell
CUSTARD:
3 eggs
1/2 c. sugar
1 1/2 c. milk
1 tsp. vanilla
1 tbsp. flour
1/2 stick butter
Stew peaches until soft. Sweeten to taste and mash well. Pour into uncooked
deep-dish pie shell and top with custard.
CUSTARD: Cream butter and sugar. Add flour and eggs and beat well. Add milk and
vanilla; pour over peaches and bake at 350 degrees for 45 minutes or until knife
inserted in center comes out clean.
You never have to wait long, or look far, to be reminded of how
thin the line is between being a hero or a goat.
