James's Easter Flan
1 1/2 cups half and half
1 12 ounce can evaporated skim milk
5 eggs, beaten
3/4 cup coconut
1 teaspoon vanilla
1 cup orange juice
1. Heat oven to 325 degrees.
2. Combine half and half, evaporated skim milk, eggs, coconut, vanilla and
orange juice in a large bowl: stir well. Pour custard mixture into a 2 1/2 quart
baking dish and place inside a larger baking dish. Fill outside baking dish
halfway with water and place in center oven rack.
3. Bake for 1 hour and 15 minutes or until a knife inserted in the center of the
flan comes out clean. Carefully, remove flan dish from hot water bath and cool
on a rack. Chill thoroughly before serving.
