In order to look healthy one must be healthy. In order to be healthy, you must exercise and eat well. This diet is for health you will not loose weight however; if it's eaten in moderation you will maintain your weight. If you use the same shampoo your hair gets dull. If you eat the same food your body gets dull. When you see the variety in the diet, it is not written in stone. You will get the ideal and substitute. There is a lot of Tex Mex and Cajun because they cook with a lot of tomatoes, onions and peppers.  I am from Texas and we had home grown vegetables. I now live in New York. Depending on where you live: I eat frozen vegetables because we can't get fresh but during the summer. We get broccoli from California, after spending time to get from the field to the truck to New York to market, it can't have any nutritional value. Food starts to deteriorate the minuet it's harvested, it's just down hill till it rots. I don't use can food unless I have to.

Foods you should not eat or that have very little nutritional value. 

Butter or Margarine substitute olive oil

Mayonnaise or mayonnaise base dressings substitute mustard, horseradish or ketchup

The best carbohydrates for active people:

Fruits and vegetables: sweet potatoes, spinach, red & green peppers, butternut squash, romaine lettuce, asparagus, baked potato with skins, peas and corn.

The best protein:

Red meats: low fat cuts, like those with loin or round in their name. 

Chicken and turkey
Eggs

Dairy products: Parmesan, swiss, cheddar, Colby, gouda, Monterey jack, skim mozzarella, nonfat yogart and skim milk.

Fish and seafood: cod, shrimp, tuna, crabs, clams, halibut and salmon.

Legumes: soybeans, peanuts, lentils, split peas, white beans, black beans and kidney beans.

Best fats

Fish and fowl: white meat chicken and turkey are low in fat. Cold water fish such as salmon and tuna are sources of omega 3 and omega 6 fatty acids.

Oils: olive, peanut, soybean, canola and flaxseed.

Fruits seeds and nuts: avocadoes, almonds, cashews, walnuts and pinenuts.

Dairy products: yogurt, low fat cheeses and milks.
