Kat's Pigeon Sauce Paradis

 

6 x Young squab
    Mixed, sliced vegetables
    (onions, celery, carrots)
1 x recipe Sauce Paradis see * Note

 Method :
Roast unmarinated squab on a bed of vegetables in a 325 degree oven for 30 minutes. Remove squab and put into a deep casserole. Pour Sauce Paradis over. Cover and bake for an additional 15 minutes.
This recipe yields 3 to 6 servings.

 Sauce Paradis

4 tbl Butter
4 tbl Flour
2 cup Double-strength Stock
    (simmer 4 cups to reduce to half volume)
1/2 cup Madeira wine
2 tbl Red-currant jelly
2 cup Seedless white grapes
2 lrg Truffles (or mushrooms) sliced

 Method :
Melt butter, add flour, and stir until smooth. Add stock and cook, stirring, until slightly thickened. Add wine and jelly and stir until jelly is melted. Add grapes and truffles.
This recipe yields 4 cups of sauce.
