Lynn's Caribbean Tenderloin
Salt
& pepper
1 1/2 tsp nutmeg
1 tsp ground allspice
1 tsp ground ginger
1 tsp curry
3 tbs fresh lime juice
1 1/2 pounds Pork Tenderloin
1 (19-ounce) can black beans
cooked rice
Combine
first 5 ingredients.
Sprinkle lime juice over pork, and rub evenly with spice mixture. Place on a
lightly greased baking sheet.
Bake at 450 degrees F for 25 to 30 minutes or until a meat thermometer inserted
into thickest portion registers 160 degrees F. Cut into slices.
Cook black beans in a saucepan until thoroughly heated; drain and stir into hot
cooked rice. Garnish, if desired
