Lynn's Sausage Bread Loaf


16 ounces Pork Sausage, mild or hot
1 (2 count) bag French bread sticks
1 cup chopped onion
4 cloves garlic, minced
2 eggs, beaten
2 teaspoons Dijon mustard
1 cup shredded Colby-Jack cheese
1/2 cup Parmesan cheese
1/3 cup loosely packed flat-leafed Italian parsley leaves
1/3 cup olive oil
1 tablespoon Dijon mustard
1 teaspoon ground black pepper


1. Heat oven to 350 degrees. Chop onion. Mince garlic. Beat eggs.

2. Split bread horizontally. Hollow out each half from center of loaf; leave 1/2-inch border at sides and bottom. Place bread removed from loaves in blender or food processor; pulse to make fine crumbs. Set loaves and crumbs aside.

3. Heat a large skillet over Medium-High heat. Add sausage, onion and garlic. Brown sausage 6 to 8 minutes until no longer pink; break sausage into fine crumbles with edge of cooking spoon. Remove skillet from heat. Stir in breadcrumbs, eggs and 2 teaspoons mustard.

4. Place spread ingredients in blender or food processor. Pulse to chop parsley and blend ingredients. Spread mixture evenly over insides of loaves. Spoon one-fourth sausage mixture into each cavity. Put halves back together. Wrap each loaf in foil and seal tightly.

5. Place loaves on a baking sheet; bake 30 minutes, or until bread is crusty and filling is hot. Let stand 2 minutes. Cut into 3/4-inch thick slices and serve.
