Cranberry Glazed Chops
2/3 cup leftover cranberry sauce
2 tablespoons port wine
2 tablespoons orange juice
3 tablespoons butter, divided (no substitutions)
4 pork chops
2 tablespoons chopped fresh thyme
salt, to taste
pepper, to taste
finely grated orange peel for garnish
In a small saucepan combine cranberry sauce, port wine, and orange juice; simmer
over low heat for 15 minutes. Meanwhile, melt 2 tablespoons of the butter in a
large skillet. Sprinkle pork chops on both sides with salt, pepper, and thyme.
Sauté over medium heat for 5 to 10 minutes each side, depending on thickness of
the chops. Stir the remaining 1 tablespoon of butter into the hot cranberry
sauce until melted. Serve sauce over pork chops and garnish with orange peel.
