     Lynn's Smothered Chicken

4 lb chicken, cut in serving portions
1/2 cup flour
Salt & Pepper
Bacon drippings or oil
1 med onion sliced
11/2 cup milk

Dredge chicken in flour and season. Brown on both sides. Lay sliced onions in baking dish.
Add the chicken. Pour on milk. Cover and bake @ 350F for 1 hour and 15 min. If desired
add 1/2 heavy cream 20 min before chicken is done.

If you want a thicker gravy, after browning chicken, thicken pan juices with equal parts flour and oil
. Use 1 tbs flour to each 3/4 cup liquid. This gravy may be substituted instead of milk, if when cooking 
it gets to thick then with a little water or milk.  Nancy's Cream GravySC11


1 tbs flour and 1 tbs oil browned. Then 3/4 cup liquid and cook till thick. You can double, triple whatever.
