  Green Olives & Cilantro Roasted Chicken

 




2 tbs peanut oil
1 3-4 pd chicken cut into pieces


Preheat oven to 500. Heat peanut oil in a large oven proof pan, add chicken that has been seasoned with salt & pepper. Place skin side down and cook until lightly brown 5 - 8 mins. Turn over and cook 2 mins. Turn it over again and place skin side down. Place pan in oven and check chicken after 15 min.  and removed cooked pieces. (breasts will cook before thighs & legs. Place chicken on plate and
