Ham Hash Brown Casserole
1 package frozen hash brown potatoes, thawed, (32oz)
1/2 cup butter, melted
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
2 cups shredded Cheddar cheese, (shredded)
1 cup chopped ham, or turkey ham
1 1/2 cups sour cream
1 can cream of chicken soup, (10 1/2oz)
1 can chopped green chile, (4oz)
1/2 cup milk
1/2 cup chopped onion
2 cups crushed potato chips
PREPARATION:
In a large bowl, combine hash browns, melted butter, salt, pepper, and garlic
powder. In separate bowl, combine cheese, ham, sour cream, soup, chiles, milk,
and onion. Add ham mixture to potato mixture; mix well.
Pour mixture into a 2-quart baking dish; sprinkle with crushed chips. Bake in a
preheated 350 degree oven for 45 to 60 minutes.
Serves 8.
Bake at 425 degrees F, basting occasionally, for about 15 minutes, until
meat thermometer registers 190 F. Remove chicken to warm serving plates; keep
warm.
Saute almonds in butter until lightly toasted. Sprinkle with salt. Let
cool to crisp.
Add orange juice concentrate to drippings in skillet; stir over high heat
until reduced by 1/3. Stir in bourbon; heat through. Stir in
remaining salt and pepper; pour sauce over chicken. Sprinkle with the almonds.

your own strength is unequal to the task, do not assume that it is beyond the
powers of man; but if anything is within the powers and province of man, believe
that it is within your own compass also.
